{"id":1073,"date":"2013-03-17T21:03:55","date_gmt":"2013-03-18T04:03:55","guid":{"rendered":"http:\/\/norwitz.net\/blog\/?p=1073"},"modified":"2013-03-17T21:03:55","modified_gmt":"2013-03-18T04:03:55","slug":"cashew-pesto","status":"publish","type":"post","link":"http:\/\/norwitz.net\/blog\/2013\/03\/17\/cashew-pesto\/","title":{"rendered":"Vegan Cashew Cilantro Parsley Pesto"},"content":{"rendered":"<p><a href=\"http:\/\/norwitz.net\/blog\/wp-content\/uploads\/2013\/03\/IMG_3238.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1074\" alt=\"Finished pesto\" src=\"http:\/\/norwitz.net\/blog\/wp-content\/uploads\/2013\/03\/IMG_3238-500x375.jpg\" width=\"500\" height=\"375\" srcset=\"http:\/\/norwitz.net\/blog\/wp-content\/uploads\/2013\/03\/IMG_3238-500x375.jpg 500w, http:\/\/norwitz.net\/blog\/wp-content\/uploads\/2013\/03\/IMG_3238-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p>Back in 2008 I created a post about <a href=\"http:\/\/norwitz.net\/blog\/2008\/05\/13\/vegan-pesto\/\">vegan pesto<\/a>.\u00a0 It&#8217;s still a great recipe, but here&#8217;s an update, made with cashews instead of pine nuts.\u00a0 Why use cashews?\u00a0 Well, they&#8217;re a lot cheaper than pine nuts.\u00a0 I switched back a year or so ago when pine nut prices went through the roof, if you could find them at all.\u00a0 And these days I&#8217;m doing a low-amine (low-histamine) diet.\u00a0 Cashews are in, pine nuts are out.<\/p>\n<h2>Recipe:<\/h2>\n<blockquote><p>2 cups raw cashew pieces<br \/>\n4 limes<br \/>\n1 tsp. salt<br \/>\n2-3 Tbsp. oil<br \/>\n1 bunch cilantro<br \/>\n1 bunch flatleaf parsley<\/p><\/blockquote>\n<p>Note that these proportions worked perfectly for the recipe I photographed here, but really they are just a guess.\u00a0 Because a &#8220;bunch&#8221; of herbs varies a lot in size.\u00a0 Limes vary not just in size but in tartness\/sweetness.\u00a0 So start here but adjust as needed.\u00a0 Especially the salt and oil.\u00a0 Taste taste taste.\u00a0 It&#8217;s the only way to get it right.<\/p>\n<p>You can make this recipe with a good blender but it&#8217;s much easier in a food processor.\u00a0 Start off with just the dry cashews.\u00a0 Get them as close to flour as you can.<\/p>\n<p><a href=\"http:\/\/norwitz.net\/blog\/wp-content\/uploads\/2013\/03\/IMG_3234.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1075\" alt=\"Limes\" src=\"http:\/\/norwitz.net\/blog\/wp-content\/uploads\/2013\/03\/IMG_3234-500x375.jpg\" width=\"500\" height=\"375\" srcset=\"http:\/\/norwitz.net\/blog\/wp-content\/uploads\/2013\/03\/IMG_3234-500x375.jpg 500w, http:\/\/norwitz.net\/blog\/wp-content\/uploads\/2013\/03\/IMG_3234-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p>Juice the limes (or use lemons if you prefer, just make sure no seeds get in) and add to the cashews.\u00a0 Add salt and the oil if you need it.\u00a0 Process until creamy.<\/p>\n<p><a href=\"http:\/\/norwitz.net\/blog\/wp-content\/uploads\/2013\/03\/IMG_3237.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1076\" alt=\"Pesto base\" src=\"http:\/\/norwitz.net\/blog\/wp-content\/uploads\/2013\/03\/IMG_3237-500x375.jpg\" width=\"500\" height=\"375\" srcset=\"http:\/\/norwitz.net\/blog\/wp-content\/uploads\/2013\/03\/IMG_3237-500x375.jpg 500w, http:\/\/norwitz.net\/blog\/wp-content\/uploads\/2013\/03\/IMG_3237-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p>Twist off and discard the ends of the parsley and cilantro bunches and wash the remaining herbs well.\u00a0 Yes, I use the stems.\u00a0 Add all but a handful of leaves to the food processor and blend well.\u00a0 Add the oil if you haven&#8217;t already.\u00a0 I use sunflower oil because it&#8217;s low-amine but extra virgin olive oil tastes best.\u00a0 Then add the leaves and pulse until it is mixed but still has some texture.<\/p>\n<p><a href=\"http:\/\/norwitz.net\/blog\/wp-content\/uploads\/2013\/03\/IMG_3259.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1077\" alt=\"Pesto &amp;
